Vegan Donuts

Science fact: Donut dough rheology is an important property that impacts the overall donut quality. This property measures the ability of the dough to flow. It can be represented by the power law equation: τ=k.D^n where τ is the tangentic stress, k is the viscosity coefficient, D is the shear rate, and n is the flow index. Many factors affect dough rheology including the type of ingredients, the amount of the ingredients, or the force applied during mixing. Dough is usually described as a viscoelastic material, meaning that its rheology depends on both the viscosity and the elasticity. The viscosity coefficient and the flow index are unique to the type of dough being analyzed, while the tangentic stress and the shear rate are measurements obtained depending on the type force being applied to the dough. #nerds



What you’ll need:

4 tbsp of vegan butter ( I use Follow your Heart)

4 tbsp of melted coconut oil

1/2 c white sugar

1/3 c brown sugar

dash of vanilla

1 overly ripe banana

1.5 tsp of baking powder

1/4 tsp baking soda

1/2 tsp of nutmeg (ground)

dash of salt

2 1/5 c flour

1 c milk


What to do: 

  1. Mix 
    Combine the butter, coconut oil, sugars, vanilla, and banana in a mixing bowl and beat until fully combined


  2. Add the dry ingredients
    baking powder, baking soda, nutmeg, salt, and 1 c of flour and mix until fully blended


  3. Add the milk and the rest of the flour
    Add 1/2 c of milk and another cup of flour and blend. Then add the final cup of milk and the final 1/2 c of flour.

  4. Spoon batter into a greased donut pan


  5. Bake 
    at 425 F for 10 minutes
  6. Let cool for 10 minutes
    Then flip onto a cooling rack to continue cooling
  7. Toppings
    For powered sugar donuts, place donuts in a bag with powered sugar and shake
    For cinnamon sugar donuts, place donuts in a bag with 1/3 c brown sugar and 3 tsp cinnamon
  8. Enjoy!
